Zucchini Mushroom Chicken

COOKING: THIS IS COOKED ON A STOVE TOP
ORIGINAL SOURCE

– INGREDIENTS –
1 lb chicken breasts, cubed – (PREP)
2-3 Tbsp olive oil
2 tsp Italian seasoning, divided
1/2 tsp kosher salt
½ tsp fresh ground black pepper
½ yellow onion, diced – (PREP)
3 cloves garlic, minced – (PREP)
12 ounces mushrooms, halved – (PREP)
1 medium-large zucchini, cut in bite-sized pieces – (PREP)
½ cup sundried tomatoes (packed in olive oil)
1 14 oz. can roasted diced tomatoes w/garlic
1-2 large ripe tomatoes, chopped – (PREP)
salt and pepper
1 tsp balsamic vinegar (optional)
fresh basil chopped – (PREP)
shredded or shaved parmesan cheese

Once (PREP) Work Marked Above Complete
Time to Cook!

xxxxxxx UNIT 1 – PASTA xxxxxxxx
In large pot, bring water to boil
Add: Salt to taste
Add: 1 pound linguine
Cook al dente – see box noodle came in for time
Once noodles are cooked, drain, rinse
Set aside

xxxxxxx UNIT 2 – CHICKEN xxxxxxxx
In frying pan / wok, over medium high heat
Add: 2-3 Tbsp olive oil
Add: 1 lb chicken breasts, cubed
Add: 1 tsp Italian seasoning
Add: 1/2 tsp kosher salt
Cook chicken until not pink in middle (Approx. 4 min)
Use: slotted spoon, remove chicken and put it in a bowl
Set chicken aside

xxxxx UNIT 3 – SAUCE / FINISH xxxxx
In same pan/wok as chicken, Over medium high heat
Add: ½ yellow onion, diced
Cook 2 min. or until onion translucent
Add: 12 ounces mushrooms, halved
Cook 5 min. or until mushrooms start to brown/soften
Add: 3 cloves garlic, minced
Add: 1 medium-large zucchini, cut in bite-sized pieces
Add: ½ cup sundried tomatoes (packed in olive oil)
Add: 1 tbsp of oil from jar of sundried tomatoes
Cook for 2 minutes

Add: 1 14 oz. can roasted diced tomatoes w/garlic
Add: 1-2 large ripe tomatoes, chopped
Add: salt and pepper to taste
Add: 1 tsp balsamic vinegar (optional)
Add: Chicken (UNIT 2)
Cook until all heated through

xxxxx PLATING xxxxx
Serve the chicken/sauce mix (UNIT 3)
Over Pasta (UNIT 1)
Top with fresh basil chopped and parmesan cheese
